The word on the gym door tells you almost nothing. WAKO alone runs three ring rule sets that disagree on whether you may kick the leg at all, and the two biggest promotions disagree with each other on sweeps and grabbing. Choose the rule set first; the comparison follows.

The closest thing to a Kyokushin bout in the kickboxing family is one rule away from it. The farthest is nearly its inverse.
Under the WKO knockdown rules, punches go to the body, kicks go to thigh, ribs and head, knees are legal, and the hand or elbow to the face or neck is a foul. No gloves are specified, no round breaks; ippon is a technique that puts the opponent down for more than three seconds. The game this produces — short range, cumulative low kicks, exchanges to the torso — is the game a whole branch of kickboxing grew out of.
Under WAKO Low Kick rules the legal targets are the head, the torso and the thigh from outside, inside and behind, with the shin permitted and knees, elbows, clinch and ground work all forbidden — Kyokushin's menu plus one thing, the punch to the head, in ten-ounce gloves and headgear. Under WAKO Full Contact rules, kicks to the hip, knee and shin are fouls and each fighter must throw at least six kicks per round above the waist. K-1 and GLORY add knees and run their own rulebooks, and they differ from each other.

K-1 was founded in 1993 by Kazuyoshi Ishii, whose Seidokaikan school of 1980 was a Kyokushin offshoot. The most famous kickboxing rule set in the world is, by descent, a knockdown karate rule set with gloves and head punches added. That is why a Kyokushin fighter's low kick, balance and recovery after a missed kick travel so well into a kickboxing ring — and why the one thing to be built from nothing is the habit of a hand arriving at the face.
It depends which one. Under WAKO Low Kick and K-1 rules and in GLORY and K-1 promotions, yes — the thigh is a legal target and the shin may be used. Under WAKO Full Contact rules, kicks to the hip, knee and shin are fouls, and every kick must land above the waist. A gym that trains for Full Contact competition will not kick your legs; one that trains for Low Kick will kick them a great deal.
No. WAKO publishes a K-1 chapter, GLORY publishes its own rulebook, and K-1 World Grand Prix publishes another. They agree on knees and on banning elbows, and disagree on the rest: GLORY bans all sweeps and throws and bans linear kicks to the leg; the K-1 promotion bans all grabbing; a national federation can allow ankle-level sweeps under K-1 rules. Ask which rulebook before assuming anything.
The account from people who made the move is consistent: rhythm, balance, kicks, recovery after a missed kick and conditioning come with them. What kickboxing adds is head movement, the defence of a punch to the face, hooks, combinations and lateral movement. One published opinion piece argues that years of hard sparring without head punches dull the reaction to them; the practitioners who cross over describe the same gap and close it with drills.
Knockdown karate demands sustained contact to the body and legs without pauses, bare-handed. Kickboxing demands three or five explosive rounds with a guard that cannot drop, in gloves that let the head be a target. Each side reports being surprised by the other's version of fatigue.
Kickboxing trains the defence of a hand to the face, which knockdown competition does not; Kyokushin trains taking impact without gloves, which kickboxing does not. No study compares the two on real outcomes. The question is addressed on the page about Kyokushin and self-defense.
